Bombay Aloo Poha
Superlite ,pluffy aloo poha is ideal for breakfast
Preparation time: 20 mins
Serves: 4
Ingredients:
Poha(soft aval): 3 cups
Potato: 1no
Onion: 2 nos
Green chilies: 4 nos
Curry leaves: 10 leaves
Mustard seeds: ¼ tspn
Cumin seeds: ¼ tspn
Groundnut seeds: 2 tblspn
Turmeric powder: ½ tspn
asafoetida: ¼ tspn
Coriander leaves: 5 strands
Cooking oil: 2 tblspn
Salt as required
Lemon(optional)
Pre-preparation:
v
Wash and soak the poha for 5 mins and squeeze he
excess water well and keep in a plate.

Slice the onion, green chilies and cut the
potato into cubes
Preparation:
v
Heat as pan or kadai, add the oil, once the oil
is heated up add the mustard seeds,cumin seeds and groundnut along with asafetida and curry leaves and sauté well
v
Once the groundnut is fried well add the slice
onion, green chilies and potato sauté well and cover it for 7 mins in low flame
v
Once the aloo is cooked add turmeric powder and
salt as required
v
Add the poha and mix well and cover it for 2 mins
Hot Superlite and pluffy Bombay aloo poha is ready to serve
Serve it with a squeeze of lemon or Sugar on top of it.
