Kovaikka roast....tindora or ivy guard roast

Super delicious sidedish for dhal Sambhar and curd rice



Preparation time: 30 mins
Serves: 4

Ingredients:

Kovaikka (tindora, ivy guard): 1/2 kg
Potato (optional): 2nos
Red chilly powder: 2 tspn
Coriander powder: 1 tspn
Cumin powder: 1/2 tspn
Turmeric powder: 1/2 tspn
Salt 2tspn
Cooking oil: 4 tblspn

Preparation:


  • Hear a kadai, iron kadai preferably 
  • Add 2 tblspn oil heat up
  • Once the oil is heated up add the chopped kovaikka and saute well in high flame, cover and cook it cook it for 10 mins, stir occasionally 
  • Once half cooked add the potatoes and saute for 5 mins
  • Add salt, red chilly powder, coriander powder, cumin powder,turmeric powder and the remaining 2 tblspn oil and roast it in medium flame for 15 mins 
Super delicious kovaikka roast is ready

Serve it as side dish for dhal fry, Sambhar or curd rice
