Panner biryani
A complete treat for vegetarians and panner lovers, simple yet tasty Panner Biryani in pressure cooker

Serves: 4
Ingredients:
Panner: 200 grms
Onion: 4 nos
Tomato: 2 nos
Green chilly: 2 nos
Ginger garlic paste: 2 tblspn
Chopped mint and coriander leaves: 1 cup
Mixed vegetables (optional): 1 cup
Red chilly powder: 2 tspn
Coriander powder: 2 tspn
Turmeric powder: 1/2 tspn
Whole spices: as required
Curd: 3 tblpsn
Juice of 1 lemon
Oil : 3 tblspn
Ghee: 1 tblspn
Basmathi rice: 2 cups
Salt as per taste

Pre-preparation:
- Slice the onions,tomatoes and green chilly
- Soak the rice for 30 mins
- Cut the panner into cubes
Method:
- Heat a pressure cooker and add the oil and ghee
- Add the whole spices and green chilly and saute well
- Add onions and saute well
- Add ginger garlic paste and cook until the raw smell is gone
- Add mixed vegetables and tomatoes and mix well
- Add turmeric powder, red chilly powder, cursing powder, salt and mix well
- Add curd and chopped mint and coriander leaves and saute well
- Once the oil is released from the gravy add the panner
- Add water in the proportion of 1:1.5
- Once the water its boiled add the soaked rice and close the lid and allow for 1 whistle in high and 1 whistle in low flame
- Open the lid one it is completely cooled
Super simple yet tasty Panner Biryani is ready to serve
Best served with onion raita
