Authentic home style South Indian drumstick Sambhar

Ingredients
Toor dhal : 1cup
Drumstick: 2 nos
Sambhar onion : 10 nos
Tomatoes: 2 nos
Garlic (optional) : 4 pods
Tamarind: 1 lemon sized
Sambhar powder: 3 tblspn
asafoetida: 1/4 tspn
Cooking oil: 2 tspn
Turmeric powder: 1/4 tspn
Mustard seeds: 1/2 tspn
Methi seeds: 1/4 tspn
Curry leaves: 10 leaves
Salt : 3 tspn
Coriander leaves and ghee for garnishing

Coriander leaves and ghee for garnishing
Pre-preparation:
- Soak the tamarind in a bowl for half an hour and extract the juice
- Boil the toor dhal with 5 Sambhar onions, tomatoes, garlic pods,asafoetida and turmeric powder with 2 cups of water for 3 whistles in a pressure cooker
Preparation:
- Heat a pan, add the 3 inch chopped drumstick with 2 cups of water and bring it to boil
- Add 3 tblspn Sambhar powder and 3tspn of salt and mix well
- Once the drumstick is cooked well add the boiled dhal and tamarind extract and mix well and allow it to boil for 10 mins
- Heat a tempering pan and add 2 tspn of oil, mustard seeds, methi seeds and remaining 5 sambar onions and saute well
- Once the onions are fried well add curry leaves and asafoetida
- Garnish the Sambhar with the prepared tempering, chopped coriander leaves and 1/2 tspn ghee
Authentic home style south Indian Sambhar is ready to serve
