Ingredients:
Bŕinjal- 5 nos
Small onion- 20 nos
Garlic - 15 pods
Tomatoes- 3 nos
Sesame oil- 3 tblspn
Mustard seeds- 1/4 tspn
Cumin seeds- 1/4 tspn
Fenugreek seeds - 1/4 tspn
Tamarind extract- 1/2 cup
Turmeric powder- 1/4 tspn
Sambar powder- 3 tblspn
Salt- 2 tblspn
Curry leaves- 10 leaves
Pre-preparation :
* Soak tamarind in a bowl
* Grind the mentioned amount of garlic and tomatoes in to a fine paste.
Preparation:
* Heat a heavy bottom Pan, mud pot or iron kadai preferably
* temper the mustard,cumin and fenugreek seeds heating the oil
* add curry leaves and small onions and saute for 5 mins
* add the ground tomatoes and garlic paste and saute for 5 mins
* add Bŕinjal and mix well
* once the vegetables are well cooked add the turmeric powder,salt and sambar powder and saute for a min
* pour in the tamarind extract and bring it to a good boil for 10 mins
Serve hot with Rice and pappad.
