Authentic chettinadu style Urundai Kuzhambu...
Serves:4
Ingredients:
Chenna dal: 1 cup
Red chilly: 3
Ginger: 1inch
Sauf:1/2 tspn
onion- 2 nos
Garlic - 5 pods
Tomatoes- 3 nos
Sesame oil- 3 tblspn
Mustard seeds- 1/4 tspn
Cumin seeds- 1/4 tspn
Fenugreek seeds - 1/4 tspn
Tamarind extract- 1/2 cup
Turmeric powder- 1/4 tspn
Sambar powder- 3 tblspn
Salt as per taste
Curry leaves- 10 leaves
Pre-preparation :

Soak
tamarind in a bowl
·
Grind
the mentioned amount of garlic and tomatoes in to a fine paste
· Soak the chenna dal for 3 hours and grind
it along with red chilly,sauf ,ginger and salt
· Add 1 onion chopped finely and make a mixture
in a mixing bowl
· Make lemon sized balls out of the mixture
and keep it on a plate
Method:

Heat a
heavy bottom Pan, mud pot or iron kadai preferably
·
Temper
the mustard, cumin and fenugreek seeds by heating the oil
·
Add
curry leaves and 1 onion finely chopped and saute for 5 mins
·
Add
the ground tomatoes and garlic paste and saute for 5 mins
· Once the onions are well cooked add the turmeric powder,salt
and sambar powder and saute for a min
· Add 1 chenna dal ball in the curry and mix
well
· Pour in the tamarind extract and bring
it to a good boil for 10 mins,
· Add the chenna balls in the curry and keep
the flame in low for 15 mins,switch off the flame once the mixture get the
right consistency
Authentic chettinadu style Urundai Kuzhambu is ready to serve
