Simple Brinjal curry- Chettinadu style

Ingredients: Bŕinjal- 5 nos Small onion- 20 nos Garlic - 15 pods Tomatoes- 3 nos Sesame oil- 3 tblspn Mustard seeds- 1/4 tspn Cumin seeds- 1/4 tspn Fenugreek seeds - 1/4 tspn Tamarind extract- 1/2 cup Turmeric powder- 1/4 tspn Sambar powder- 3 tblspn Salt- 2 tblspn Curry leaves- 10 leaves Pre-preparation : * Soak tamarind in a bowl * Grind the mentioned amount of garlic and tomatoes in to a fine paste. Preparation: * Heat a heavy bottom Pan, mud pot or iron kadai preferably * temper the mustard,cumin and fenugreek seeds heating the oil * add curry leaves and small onions and saute for 5 mins * add the ground tomatoes and garlic paste and saute for 5 mins * add Bŕinjal and mix well * once the vegetables are well cooked add the turmeric powder,salt and sambar powder and saute for a min * pour in the tamarind extract and bring it to a good boil for 10 mins Serve hot with Rice and pappad.

Easy Panner butter Masala under 15 mins.....!!!!! Ingredients required: Panner- 200grms Onion- 4 Tomatoes - 4 Cashewnuts- 10 Ginger garlic paste- 1 tblspn Kashmiri red chilly powder- 2 tblspn Corainder powder- 2 tblspn Garam masala- 1 tblspn Kasuri methi- 1 tblspn Salt - as required Butter- 2 tblspn Oil - 2 tblspn Cream- 2 tblspn (optional) Cardamom -2 pods Bayleaf - 1 Required time 15 mins+ 10 mins prep time Serves: 4 Heat a pan add 2 tblspn oil, once the oil is heated add 2 green cardamom roughly chopped onions and tomatoes, saute slightly till the it becomes soft Add cashewnuts and ginger garlic paste and saute. Once half cooked add in the red chilly powder and coriander powder and saute.
